Nicole Unruh, 36, owned Nico’s Little Italy in Aggieville. She died on Friday, leaving a hole in the community. Her long-held dream of opening a diner will not come true until November 15. This will give her time to grieve and remember.

Nicolette’s dream of opening her own restaurant came true, and she did it with the help of her best friend Skyler Wikoff, who works as the service manager at Nico’s Little Italy. Dale and Bernadette Unruh, her husband Nathan “Nate” Uhl, her nephew Tristen Uhl, and her brothers Adam, Grant, and Danette Unruh will all miss her.
There are many aunts, uncles, and cousins who are sad about her death. They include her grandparents, Wynona Unruh and Carol Pachta, and her in-laws, Bobby and Patricia Uhl. From 5 to 7 p.m. on Thursday, people can visit St. Thomas More Catholic Church. At 7 p.m., there will be a prayer.
The service will be held at the same church on Friday at 10 a.m., and the burial will be at the Bergthal Mennonite Cemetery on Saturday at 11 a.m. People in the community come together to remember Nicolette Unruh and the amazing things she did in her short but powerful life.
